Mitate Foods Industry Co., Ltd.’s “Non-Gluten 100% Japanese Rice Flour Powder” is a rice flour made entirely from domestically grown Japanese rice, which received Japan’s first “Non-Gluten Rice Flour Certification” in 2018. This certification is granted only to rice flour products containing 1 μg/g (1 ppm) or less of gluten.

Because it is relatively easy to find in supermarkets in Japan, we use this rice flour regularly in our household.
It can be used not only for baked goods such as bread, pound cakes, and cookies, but also for fried dishes such as karaage and tempura, as well as okonomiyaki, and as a thickening agent for dishes like stews and white sauces.
Unlike wheat flour, it does not form lumps easily, allowing cakes and breads to be made more reliably. In addition, because it does not contain gluten, it does not become sticky over time.
