Namisato Komachi Fettuccine is a gluten-free rice pasta made with Akitakomachi rice grown in Akita Prefecture, Japan.

Made without wheat, eggs, or salt, it has a satisfyingly chewy texture. Because it is a semi-fresh pasta, it cooks in just about 3 minutes, making it a convenient choice for busy days.

Its wide, flat shape pairs well with a variety of sauces, including tomato sauce, cream sauce, carbonara, and olive oil–based pasta dishes. While some rice pasta can be delicate and break easily, this fettuccine has the same pleasantly chewy texture and satisfying bite as Namisato's Komachi Udon.

It doesn't feel like a substitute for traditional wheat pasta at all and is delicious in its own right. In our experience, cooking it for about 3 minutes works well. Since the noodles can stick together slightly, adding a small amount of olive oil to the cooking water seems to help keep them separated and makes them easier to toss with the sauce.
