“Jukusei Basque Cheesecake” in Ota City, Tokyo, is a rich cheesecake made with carefully selected Hokkaido cream cheese and fresh cream. It is aged in two stages to create its distinctive flavor and texture.
This cheesecake was not developed by a famous pastry chef, but by the president of an IT venture company who had no previous cooking experience. The idea was inspired by his son’s allergies, with the hope of creating a cheesecake that could be enjoyed by as many people as possible.
Unlike many gluten-free cheesecakes that use rice flour as a substitute for wheat flour, he came up with the unique idea of “aging the cheesecake,” similar to the way certain meats and fish are aged to enhance flavor.
After many trials and adjustments, the “two-stage aging process” was developed, in which the cheesecake is aged twice at a low temperature below 10°C. According to the shop, this process resulted in a richer umami flavor and a much creamier, denser texture compared with a regular Basque cheesecake.
The cheesecake gained popularity through crowdfunding and was featured in various media outlets. It became known as a “phantom cake” that was difficult to get, often selling out at events within about two hours.
The shop location can be a little difficult to find, so ordering online is also a convenient option.
